Pressing Soft in the absence of sulphites
Fermentation At a controlled temperature of 15-16°C, with selected yeasts in the absence of sulphites. In this type of wine the fermentation is interrupted by drastically lowering the temperature to 0°C in such a way as to be able to still keep the unfermented natural sugars in solution which then give the wine that honeyed and sweet note.
Refinement In steel, 5/6 months
Tasting card Golden yellow in colour. Hints of dried fruit and honey on the nose, warm and soft on the palate
