The vineyards of Tenuta De ‘Notari are cultivated with Guyot system with an average production of 8,000 kg. per hectare and a density of about 4500 plants. The Estate fits perfectly within its ethnic context, the technologically advanced instruments do not conflict in any way with tradition. Attention is currently focused on the production of three wines branded De’Notari: Cesanese Igt, extraordinary red coming from the homonymous vine and back into vogue recently, the amazing De Notari Igt Malvasia white wine which is also made from indigenous grapes and the Crio 12 – FRASCATI DOCG SUPERIORE, from grapes selected from the most suitable land and better exposed territory of the Estate. From a maceration of the grapes at low temperature for a minimum of twelve hours through the application of carbon dioxide (CO2) is derived a liquid must pressed very softly , then fermented at controlled temperatures in small vats.
