WINE It represents the most important native vine of Lazio. A vine that has always been cultivated in Lazio, abandoned in the sixties, replaced by non-native red grape varieties. Today it is having a new rebirth thanks to its distinctive organoleptic characteristics appreciated by an increasingly attentive consumer. TECHNICAL DATA SHEET Grapes: Cesanese d'Affile 100% Production area: Column (Rm) Vineyard area: approximately 15,000 m2 Vineyard altitude: about 350 m above sea level Type of soil: volcanic origin, rich in skeleton and mineral elements Breeding system: Guyot espalier Density of the stumps: 5,435 vines per hectare Production per vine stock: 1.5 kg Yield of grapes into wine: 65% Harvest time: end of September Grape harvest: by hand in crates Winemaking: destemming-crushing and immediately into the fermentation vats Alcoholic fermentation: in steel at controlled temperature, with continuous pumping over Malolactic fermentation: turning point Finishing method: batonnage in steel on its own fine lees, then in the bottle before being put on the market alcohol content: 14% Color: intense ruby red which, with aging, tends towards garnet Aroma: floral notes that recall violets predominate, hints of fruity notes that take us back to wild berries Taste: acidity and tannicity characterize it for its freshness but, so well integrated and balanced, to make it extremely Andbinder Food pairing: due to its deep connection with the territory we propose the pairing with dishes of popular Roman cuisine such as a nice “amatriciana” and lamb “scottadito” Serving temperature: 14/16°C
