Grapes: Red grapes Alcohol: 12% vol Format: 0.75 l Serving temperature: 10-12° Time to taste it: Aperitif, appetizer, meal and after meal Type: Brut rosé sparkling wine Tasting notes Obtained from the early thinning of bunches of red grapes, vinified in white, with subsequent refermentation in the bottle. The processing is according to the classic or champenoise method, therefore resulting in a highly artisanal product. All the steps required by the classic method are carried out by hand: for better refinement in the bottle and to encourage the development of further evolutionary organoleptic characteristics, for example, decanting, coup de poignée and remouage are performed, followed by a degorgement à la volée. With a salmon pink color, it has a fine and persistent perlage, with fruity and floral aromas and a fresh and savoury finish. Pairings This delicate bubble, which melts on the tongue, is a “full-meal” sparkling wine. Suitable for aperitifs and starters (e.g. semi-mature cheeses, cured meats), first courses (especially fish-based) and second courses (e.g. roast, boiled meat, fish-based second courses), and of course as an after-dinner drink (especially if accompanied by cream and butter-based desserts, such as cheesecake).
