Quality brut sparkling wine obtained using exclusively Cesanese grapes, the most important native vine of our region Grape variety: 100% Cesanese Grape harvest: Manual in small crates, selection of the best Cesanese grapes. Fermentation: The maceration of the must with the skins lasts only a few hours, to give the typical color. The first alcoholic fermentation takes place in steel vats after the harvest and is followed by a rest period. At the beginning of spring the second fermentation begins in an autoclave, with a second fermentation of at least 60 days. Il Maggiore is a Martinotti method sparkling wine, a system invented in 1895. Aging: In an autoclave and in the bottle Organoleptic Characteristics: Color: The delicate powder pink color with antique pink reflections identifies its origin from Cesanese grapes. Aroma: The nose is struck by the clear and fruity bouquet, with wild strawberries, white peach and light notes of white currant. Taste: A well-balanced sparkling wine on the palate between flavor and freshness, which gives a silky and full sensation. Wild strawberries, peaches and white flowers are repeated in the mouth, with citrus notes in the long finish. Perlage: Fine, persistent and elegant. Pairings: Excellent as an aperitif, ideal with fish-based dishes, sushi, meat carpaccio or imaginative salads. Alcohol content: 12% vol. Serving temperature: Serve at a temperature of 6-8°C.
