Grape varieties: Malvasia del Lazio 70%, Greco 15%, Bombino 15% Training method: spurred cordon and guyot, 4,400 vines per hectare Age: 30 to 60 years Production per Ha.: 70 q.li Altitude of the vineyards: 250 m. Soil: of volcanic origin, chalky, with good structure Production area: Frascati DOC area in the municipality of Rome Harvest: from 10 to 30 September with strictly manual harvesting in the early hours of the day. Particular care is dedicated to the selection of the grapes following the right degree of ripeness. Production technique: cryomaceration and soft pressing of the grapes with the use of only free-run must Aging: conservation “sur lie” for 4/5 months Organoleptic characteristics: bright straw yellow with gold-green reflections. Bouquet of great breadth and intensity with marked floral and exotic fruit notes. Taste : full, warm, soft, long-lasting Pairings: first courses, shellfish, carpaccio and fresh cheeses. Alcohol content: 13.5% vol.
