Grape varieties: Montepulciano 50% Cesanese 20% Syrah 30% Type of cultivation: 5000 vines per hectare trained in Guyot. Production per hectare: 70 q.li Altitude of the vineyards: 100 mt. Production area: Volcanic hills north of Rome. Harvest: end of September, manual harvest with selection of the grapes. Vinification: Fermentation in steel between 24 and 28 °C pumping over, delestage, maceration on the skins. Aging : 40% steel and 60% wood (500-liter French tonneau). Organoleptic characteristics: intense ruby ​​red color; red fruit, vanilla and spices on the nose; strong and elegant taste with sweet and well-balanced tannins. Long finish with excellent persistence. Pairings: wine for the whole meal, excellent with meats and mature cheeses. Alcohol content: 13% vol.
