Grape variety: Cesanese 100 % Type of training: Guyot row, 5,500 vines per hectare Age of the vines: 15-20 years Production per hectare : 60-70 quintals Altitude of the vineyards: 100-250 m. Soil: rich in pebbles and outcropping basalt Production area: volcanic hills of Rome and Lazio Maremma Harvest: early October manual harvest with selection of the grapes Production technique: red vinification at a controlled temperature between 24-27 °C, with maceration on the skins for 14-16 days Aging: in steel Organoleptic characteristics: ruby red color of excellent intensity with violet reflections.
